Homemade caffeine gummies made with green tea, grass-fed gelatin, raw honey, and fresh lemon juice.

Ingredients

  • 3 bags Green tea (Or 2 tbsp loose leaf)
  • 1 cup Water (Hot, not boiling)
  • 3 tbsp Grass-fed gelatin (Powdered, unflavored)
  • 3 tbsp Raw honey
  • 2 tbsp Lemon juice (Freshly squeezed)

Steps

  1. Brew a strong green tea concentrate by steeping 3 tea bags in 1 cup of hot water (around 175Β°F / 80Β°C) for 5 minutes. Remove the bags and squeeze them to extract maximum flavor and caffeine. Let the tea cool to warm β€” not hot.

  2. Pour the warm tea into a small saucepan. Sprinkle the gelatin evenly over the surface and let it bloom for 3-4 minutes. The gelatin will absorb the liquid and turn into a thick, wrinkled layer β€” this is normal and necessary for a smooth final texture.

  3. Place the saucepan over low heat and stir gently until the gelatin is completely dissolved and the liquid is smooth with no visible granules. This takes about 2-3 minutes. Don’t let it boil β€” boiling degrades the gelatin’s ability to set.

  4. Remove from heat and stir in the raw honey and lemon juice. The lemon juice adds flavor and a touch of tartness that balances the honey’s sweetness. Stir until everything is fully incorporated.

  5. Pour the mixture into silicone gummy molds β€” a medicine dropper or small measuring cup with a spout makes this much easier. If you don’t have gummy molds, pour the mixture into a parchment-lined shallow container and cut into cubes after setting.

  6. Refrigerate for at least 1 hour until the gummies are firm and pop cleanly out of the molds. Store them in an airtight container in the fridge.
