Chicken Avocado Wrap

A filling whole grain wrap with seasoned chicken breast, creamy avocado, crisp lettuce, and sea salt.

Ingredients

  • 2 large Whole grain wraps (Look for minimal ingredients)
  • 1 large Chicken breast (About 8 oz)
  • 1 medium Avocado (Ripe)
  • 2 leaves Lettuce (Romaine or butter lettuce)
  • 1/2 tsp Sea salt
  • 1 tbsp Olive oil

Steps

  1. Season the chicken breast generously on both sides with sea salt. Let it sit at room temperature for 10 minutes β€” this lets the salt penetrate and brings the chicken to a temperature that cooks more evenly.

  2. Heat olive oil in a skillet over medium-high heat until it just begins to shimmer. Place the chicken in the pan and cook for 5-6 minutes per side without moving it. The surface should develop a golden sear.

  3. Remove the chicken when the thickest part reads 165Β°F (74Β°C) on a meat thermometer, or when the juices run clear. Let it rest for 5 minutes on a cutting board β€” resting keeps the juices inside the meat instead of running out onto the board.

  4. While the chicken rests, halve the avocado and mash the flesh in a small bowl with a pinch of sea salt. Wash and dry the lettuce leaves.

  5. Slice the rested chicken into thin strips against the grain. Cutting against the grain shortens the muscle fibers and makes each bite more tender.

  6. Lay out the wraps. Spread the mashed avocado across the center of each wrap, lay down the lettuce, then arrange the chicken strips on top. Fold the bottom edge up, then roll tightly from one side to the other.
