Tahini Date Bars

Chewy, nutty bars made from dates, tahini, and oats. Rich in iron and calcium, ready in 10 minutes, no oven required.

Ingredients

  • 1 cup Medjool dates (about 10 large, pitted)
  • 1/3 cup Tahini (well-stirred)
  • 3/4 cup Rolled oats
  • 1/4 teaspoon Sea salt

Steps

  1. Add the pitted dates to a food processor and pulse until they break down into a sticky paste, about 15 to 20 pulses. Scrape down the sides between pulses to ensure even processing.
  2. Add the tahini, rolled oats, and sea salt to the food processor. Process continuously for 20 to 30 seconds until the mixture forms a cohesive dough that pulls together in a ball. The oats should be partially broken down but still have visible texture.
  3. Line a small baking dish or loaf pan (approximately 8 by 4 inches) with parchment paper, leaving overhang on the sides.
  4. Transfer the dough to the prepared pan and press it firmly and evenly into the bottom using the back of a spoon or your hands. The firmer you press, the better the bars will hold together when sliced.
  5. Refrigerate for at least one hour until the bars are firm enough to slice cleanly. Lift out the slab using the parchment overhang and cut into 10 even bars with a sharp knife.

Why It Works

Tahini, made from ground sesame seeds, is one of the richest plant-based sources of calcium and iron, two minerals that many people, especially those eating primarily plant-based, tend to be low in. Dates provide a natural caramel sweetness and act as the binding agent that holds the bars together. Rolled oats contribute fiber and complex carbohydrates for sustained energy during long study or work sessions, preventing the focus-draining crashes that come from reaching for processed snack bars.

Tips

  • Variation. Drizzle the top of the pressed slab with melted dark chocolate before refrigerating for a chocolate-tahini version. Sprinkle with flaky sea salt.
  • Storage. Wrap individual bars in parchment paper and store in the refrigerator. They freeze beautifully and thaw in about 10 minutes at room temperature.
  • Substitution. Sunflower seed butter can replace tahini for a different flavor. Quick oats produce a smoother bar; rolled oats give a chewier texture.
