Ingredients

  • 1 cup sunflower seeds (raw, shelled)
  • 3/4 cup pumpkin seeds (raw, shelled (pepitas))
  • 1/4 cup sesame seeds
  • 2 egg white (lightly whisked)
  • 1 tbsp fresh rosemary (finely minced)
  • 3/4 tsp sea salt

Steps

  1. Preheat your oven to 325°F. Line an 8x8 baking pan with parchment paper.
  2. Combine the sunflower seeds, pumpkin seeds, sesame seeds, minced rosemary, and sea salt in a large bowl. Toss until the herbs and salt are evenly distributed.
  3. Add the lightly whisked egg whites to the seed mixture and stir until every seed is coated with a thin, even layer. The egg white is the only binder here, so thoroughness matters.
  4. Press the mixture firmly and evenly into the prepared pan. Use the back of a measuring cup or spatula to compact it as tightly as possible — gaps mean crumbly bars.
  5. Bake for 30-35 minutes until the top is golden and the edges are crisp. The center may feel slightly soft but will firm as it cools.
  6. Let cool completely in the pan before lifting out and slicing into 12 bars. Cutting while warm will cause crumbling.
