Perfect Hard-Boiled Eggs

Foolproof hard-boiled eggs with creamy yolks and easy-peel shells — the simplest high-protein road trip snack.

Ingredients

  • 6 eggs (large, preferably pasture-raised)
  • enough to cover eggs by 1 inch water
  • 1 tsp sea salt

Steps

  1. Place the eggs in a single layer in a saucepan. Cover with cold water by about 1 inch. Add the sea salt.
  2. Bring the water to a full, rolling boil over medium-high heat. As soon as it boils, remove the pan from the heat and cover with a tight-fitting lid.
  3. Let the eggs sit in the hot water for exactly 12 minutes. Set a timer — this is not approximate.
  4. While the eggs rest, prepare an ice bath by filling a bowl with cold water and plenty of ice. When the 12 minutes are up, transfer the eggs immediately to the ice bath using a slotted spoon.
  5. Let the eggs cool in the ice bath for at least 5 minutes. This stops the cooking instantly and makes peeling dramatically easier.
  6. Peel under cold running water for the cleanest shells. Store unpeeled in the refrigerator until ready to travel.

Why It Works

Starting with cold water and bringing it up gradually means the eggs heat evenly, preventing rubbery whites and that unappetizing gray-green ring around the yolk. The 12-minute off-heat rest gives you a fully set yolk that is still slightly creamy in the center. The immediate ice bath contracts the egg away from the membrane, which is why the shell practically falls off.

Tips

  • Variation. Slice in half and sprinkle with everything bagel seasoning, smoked paprika, or a drizzle of olive oil and flaky sea salt for a more interesting snack.
  • Storage. Keep eggs in their shells until you are ready to eat them — the shell is a natural protective barrier. Pack them in a small container with a damp paper towel to prevent rolling and cracking.
  • Freshness. Ironically, slightly older eggs (7-10 days old) peel more easily than very fresh ones. If you buy farm-fresh eggs, let them sit in the refrigerator for a few days before boiling.
