Coconut Date Rolls

Naturally sweet rolls made from Medjool dates, cashews, and shredded coconut — no added sweeteners needed.

Ingredients

  • 12 Medjool dates (pitted)
  • 1 cup shredded coconut (unsweetened, divided)
  • 1/2 cup cashews (raw)
  • 1/2 tsp vanilla (pure vanilla extract)

Steps

  1. Add the pitted dates, cashews, 1/2 cup of the shredded coconut, and vanilla extract to a food processor. Pulse 15-20 times, then process continuously until the mixture forms a thick, sticky dough that pulls away from the sides. Scrape down as needed.
  2. Spread the remaining 1/2 cup shredded coconut on a plate or shallow dish.
  3. Scoop about 1 tablespoon of the date mixture and roll it between your palms into a log or ball shape. If it sticks to your hands, dampen them slightly with water.
  4. Roll each piece in the shredded coconut, pressing gently so the coconut adheres to the surface.
  5. Place the finished rolls on a parchment-lined tray and refrigerate for at least 15 minutes to firm up. They can be eaten immediately but hold their shape better after chilling.

Why It Works

Medjool dates are naturally sticky, caramel-like, and sweet enough to replace any added sweetener entirely. When blended with cashews, the fat from the nuts tempers the sweetness and gives the rolls a fudge-like texture. The coconut coating serves double duty — it prevents sticking and adds a layer of flavor and texture contrast.

Tips

  • Variation. Add 2 tablespoons of raw cacao powder to the food processor for a chocolate version, or mix in 1 tablespoon of chia seeds for extra nutrition.
  • Storage. Store in a single layer in a sealed container in the fridge. You can also freeze them — they thaw in about 10 minutes at room temperature, making them a great grab-and-go option.
  • Date quality. Use soft, plump Medjool dates. If your dates are dry or stiff, soak them in warm water for 10 minutes and drain thoroughly before processing. Dry dates will not blend smoothly.
