Overnight Oats

Creamy overnight oats with chia seeds and raw honey — prep the night before, grab from the fridge in the morning.

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (whole milk or coconut milk)
  • 1 tbsp chia seeds
  • 1 tbsp raw honey
  • 1/2 tsp vanilla (pure vanilla extract)

Steps

  1. Combine the rolled oats, milk, chia seeds, raw honey, and vanilla in a jar or airtight container. Stir thoroughly — chia seeds clump if not properly mixed, and you will end up with a gel pocket at the bottom.
  2. Seal the jar and shake it once or twice, then stir again to make sure nothing has settled.
  3. Refrigerate overnight, or for at least 6 hours. The oats and chia seeds will absorb the liquid and soften into a pudding-like consistency.
  4. In the morning, give it a stir. If the oats are too thick, add a splash of milk and stir until you reach your preferred consistency. If too thin, let it sit for 10 more minutes.
  5. Top with fresh fruit, a handful of nuts, or a drizzle of additional honey. Eat cold straight from the jar.

Why It Works

The overnight soak hydrates the oats and activates the chia seeds, which absorb roughly 10 times their weight in liquid and create a thick, creamy gel. This process softens the oats without any cooking, and the texture in the morning is closer to pudding than porridge. Raw honey dissolves completely during the soaking process, sweetening every bite evenly rather than sitting in a sticky layer at the bottom.

Tips

  • Variation. For a chocolate version, add 1 tablespoon of raw cacao powder. For a tropical twist, use coconut milk and top with mango and toasted coconut flakes.
  • Storage. Prep 3-4 jars on Sunday night for the entire work week. The oats keep well for several days and actually improve in texture after the first night. Add fresh toppings the morning you eat them.
  • Oat type. Use rolled oats, not steel-cut or instant. Steel-cut will not soften enough overnight and stay unpleasantly crunchy. Instant oats will turn to mush. Rolled oats hit the right balance.
