Coconut Yogurt Parfait

Layers of coconut yogurt, homemade granola, and fresh berries — a simple, beautiful breakfast you can assemble in a jar.

Ingredients

  • 3/4 cup coconut yogurt (plain, unsweetened)
  • 1/4 cup homemade granola (or store-bought with clean ingredients)
  • 1/2 cup fresh berries (blueberries, strawberries, raspberries — any combination)
  • 1 tsp raw honey (for drizzling)

Steps

  1. Spoon about 1/3 of the coconut yogurt into the bottom of a glass, jar, or bowl. Spread it into an even layer.
  2. Add a layer of granola — about 2 tablespoons — on top of the yogurt. The granola should sit on the yogurt, not be stirred in.
  3. Add a layer of fresh berries — about half of your berries — on top of the granola.
  4. Repeat the layers: remaining yogurt, remaining granola, remaining berries. End with berries on top for visual appeal.
  5. Drizzle the raw honey over the top and serve immediately. If eating later, keep the granola separate and add it just before eating to preserve its crunch.

Why It Works

Layering rather than mixing is not just aesthetics — it controls texture. Each spoonful gets a distinct combination of creamy yogurt, crunchy granola, and juicy berries. The granola stays crisp when sandwiched between yogurt layers because it has less surface area in contact with moisture than it would if stirred in. Coconut yogurt has a natural richness and slight tang that pairs well with both the sweetness of the berries and the toasty warmth of the granola.

Tips

  • Variation. Swap fresh berries for sliced banana and a sprinkle of cacao nibs, or use diced mango and toasted coconut flakes for a tropical version.
  • Storage. To meal-prep parfaits, layer the yogurt and berries in jars and refrigerate. Pack the granola in a small separate container or bag and add it right before eating. Pre-assembled parfaits with granola included will be soggy within a few hours.
  • Yogurt quality. Read the label on coconut yogurt carefully. Many brands add sugar, thickeners, and fillers. Look for one with a short ingredient list — coconut cream, live cultures, and maybe tapioca starch is all you need.
