Sweet Potato Puree

Silky baked sweet potato puree with a whisper of cinnamon — a nutrient-rich first food.

50 min beginner Yields 1 cup Keeps 3 days refrigerated, 3 months frozen

Ingredients

  • 1 large Sweet potato (Orange-fleshed variety)
  • 2-4 tbsp Breast milk, formula, or water (For thinning)
  • 1 pinch Ground cinnamon (Optional)

Steps

  1. Preheat the oven to 400°F (200°C). Wash the sweet potato thoroughly and poke it several times with a fork to allow steam to escape during baking.

  2. Place the sweet potato directly on the oven rack (with a baking sheet below to catch any drips). Bake for 40-45 minutes until it’s completely soft and a knife slides through the center without resistance.

  3. Let the sweet potato cool until comfortable to handle, then slice it open and scoop the flesh into a bowl. Discard the skin.

  4. Mash with a fork, then add breast milk, formula, or water one tablespoon at a time, stirring until you reach the desired consistency. Add the pinch of cinnamon if using.

  5. For the smoothest puree, blend in a food processor or push through a fine mesh strainer. Serve warm or at room temperature.

Why It Works

Baking concentrates the sweet potato’s natural sugars and deepens the flavor far more than boiling or steaming, which can wash out nutrients into the cooking water. Sweet potatoes are exceptionally rich in beta-carotene, which converts to vitamin A — critical for a baby’s developing eyesight and immune system. The small pinch of cinnamon is gentle enough for babies and adds warmth without any sugar.

Tips

  • Bake in bulk. Roast 3-4 sweet potatoes at once, puree them, and freeze in ice cube trays. Pop out frozen cubes and thaw individual portions as needed.
  • Thin gradually. It’s easier to thin a thick puree than to thicken a watery one. Add liquid one tablespoon at a time.
  • Don’t peel before baking. The skin holds the potato together during baking and peels off effortlessly after. It also locks in moisture and nutrients.
