Homemade Fruit Leather

Chewy, naturally sweet fruit leather made from strawberries, applesauce, and a touch of honey.

Ingredients

  • 2 cups Strawberries (Fresh or frozen, hulled)
  • 1/2 cup Unsweetened applesauce
  • 1 tbsp Raw honey (Optional, depending on fruit sweetness)

Steps

  1. Preheat your oven to its lowest setting, ideally 170Β°F (75Β°C). If your oven doesn’t go that low, set it to 200Β°F and prop the door open slightly with a wooden spoon to lower the temperature.

  2. Blend the strawberries, applesauce, and honey in a blender until completely smooth. Taste the mixture β€” it should be noticeably sweet since the flavor concentrates as it dries.

  3. Line a rimmed baking sheet with a silicone baking mat (preferred) or parchment paper lightly greased with coconut oil. Pour the fruit puree onto the sheet.

  4. Use an offset spatula to spread the puree into a thin, even layer about 1/8 inch thick. Pay extra attention to the edges β€” they dry faster, so make them slightly thicker than the center.

  5. Place in the oven and dry for 3-4 hours. The fruit leather is done when it’s tacky to the touch but no longer sticky or wet. It should peel away from the mat cleanly.

  6. Let cool completely, then peel off the mat. Cut into strips with scissors, roll each strip in parchment paper, and store in an airtight container.

Why It Works

Low-and-slow oven drying removes moisture from the fruit while preserving its natural sugars and flavor, creating a concentrated, chewy snack without any of the additives found in store-bought fruit snacks. The applesauce adds pectin, which helps the leather set into a pliable, rollable sheet rather than a brittle crisp. This is pure fruit in a fun, portable format.

Tips

  • Spread evenly or pay the price. Thin spots will over-dry and become brittle while thick spots stay gummy. Take the extra minute to smooth it out with a spatula.
  • Silicone mat over parchment. Parchment works but the leather can stick, especially around the edges. A silicone baking mat releases perfectly every time.
  • Test before pulling. If the center still feels wet or leaves residue on your finger, give it another 30 minutes. Under-dried leather molds quickly in storage.
