Juice-filled gelatin gummies with a burst of real fruit puree inside — a homemade take on the classic lunch box treat.

Ingredients

  • 1 cup Fruit juice (Grape, berry, or cherry — 100% juice, no added sugar)
  • 3 tbsp Grass-fed gelatin (Powdered, unflavored)
  • 1 tbsp Raw honey (Adjust to taste depending on juice sweetness)
  • 1/4 cup Fruit puree (Strawberry, mango, or raspberry — blended smooth and strained)
  • 1 tsp Coconut oil (For greasing the mold)

Steps

  1. Lightly grease a silicone gummy mold or a small baking dish with coconut oil. If using a baking dish, you’ll cut the gummies into squares after they set.

  2. Pour 3/4 cup of the fruit juice into a small saucepan. Sprinkle 2 tablespoons of the gelatin evenly over the surface and let it sit for 5 minutes without stirring. The gelatin needs to bloom — it absorbs the liquid and swells, which ensures smooth melting without clumps.

  3. Heat the juice and gelatin over low heat, stirring gently, until the gelatin dissolves completely. Do not boil — high heat breaks down gelatin’s setting power. Stir in the honey until dissolved. Pour this mixture into the molds, filling each cavity about two-thirds full. Refrigerate for 20 minutes until partially set — firm enough to hold an indent but still slightly tacky on top.

  4. While the first layer sets, prepare the fruit center. Blend your chosen fruit into a smooth puree and strain out any seeds. In a separate small bowl, combine the remaining 1/4 cup juice with the remaining 1 tablespoon gelatin. Let it bloom for 5 minutes, then microwave in 10-second bursts, stirring between each, until the gelatin dissolves. Stir in the fruit puree.

  5. Spoon or pipe a small amount of the fruit puree mixture into the center of each partially set gummy — about 1/2 teaspoon per cavity. Don’t overfill or the puree will reach the edges and the gummy won’t seal properly.

  6. Let the fruit centers set for 10 minutes in the refrigerator. Then pour or spoon a thin layer of any remaining juice-gelatin mixture over the top to seal the centers. If your original mixture has set, gently reheat it over low heat until liquid again. Refrigerate for at least 1 hour until completely firm. Pop the gummies out of the molds and store in an airtight container in the fridge.

Why It Works

Commercial fruit gummies use corn syrup, modified food starch, artificial colors, and chemical flavoring agents to create a product that contains almost no actual fruit. This version flips the formula entirely — real fruit juice and puree provide the flavor, color, and sweetness, while grass-fed gelatin provides the chewy texture. Gelatin is rich in glycine and proline, amino acids that support gut lining and joint health. The two-layer technique creates that signature burst of fruity liquid inside a firmer shell, replicating the experience kids love without any of the synthetic ingredients.

Tips

  • Use bold-colored juices. Grape, tart cherry, and pomegranate juice produce the most vibrant gummies without any added coloring. Pale juices like apple work fine but look less exciting to kids.
  • Don’t skip the bloom. Sprinkling gelatin over cold liquid and letting it sit before heating is essential. Adding gelatin directly to hot liquid creates rubbery clumps that never fully dissolve.
  • Mold options matter. Silicone gummy molds with small cavities work best for individual pieces. If you don’t have molds, pour into a parchment-lined loaf pan and cut into cubes once fully set.
  • Vegan & kosher alternative. Replace the grass-fed gelatin with agar-agar powder — use 2/3 teaspoon for the outer shell and 1/3 teaspoon for the fruit center layer. Whisk the agar into the cold liquid, bring to a gentle boil (agar must boil to activate), and simmer for 2 minutes before pouring. The two-layer technique works the same way with agar, though the outer shell will be slightly firmer and less stretchy than gelatin. The fruit puree burst inside still delivers.
