Creamy Avocado Pudding

Ingredients

  • 1 large Ripe avocado
  • 1 medium Banana (ripe with brown spots for maximum sweetness)
  • 2 tablespoons Cacao powder (raw, unsweetened)
  • 1 tablespoon Raw honey
  • 1/4 cup Coconut milk (full-fat, canned)

Steps

  1. Halve the avocado, remove the pit, and scoop the flesh into a blender or food processor. The avocado must be fully ripe — it should yield easily to gentle pressure. An underripe avocado will produce a pudding with a waxy, unpleasant texture.

  2. Peel the banana and break it into chunks. Add it to the blender along with the cacao powder, raw honey, and coconut milk.

  3. Blend on high for 45-60 seconds, scraping down the sides once, until completely smooth and creamy. The pudding should have the consistency of thick mousse — no lumps, no stringy avocado fibers.

  4. Taste and adjust sweetness. Ripe bananas vary in sugar content, so you may want more honey or none at all depending on your banana. Add another splash of coconut milk if the pudding is thicker than you prefer.

  5. Spoon into small bowls or cups and serve immediately at room temperature, or refrigerate for 30 minutes for a chilled pudding with a firmer texture.
