Iced Coconut Coffee

Ingredients

  • 1 cup Cold brew coffee (strong concentrate, homemade or store-bought)
  • 1/3 cup Coconut milk (full-fat canned, shaken well)
  • 1-2 tsp Maple syrup (pure, grade A)
  • 1/4 tsp Vanilla extract
  • 1 cup Ice

Steps

  1. Fill a tall glass with ice. The more ice you use, the colder and more refreshing the drink stays โ€” cold brew is meant to be sipped slowly.

  2. Pour the cold brew coffee over the ice. If your cold brew concentrate is very strong, dilute it with a splash of filtered water first. The coffee should taste bold but not harsh.

  3. In a small jar or cup, whisk together the coconut milk, maple syrup, and vanilla extract until smooth. Full-fat canned coconut milk creates the richest, most latte-like texture.

  4. Pour the coconut milk mixture slowly over the back of a spoon into the glass so it layers on top of the coffee. This creates a beautiful gradient effect. Stir when ready to drink.

  5. Taste and adjust โ€” add more maple syrup if you prefer it sweeter, or more coconut milk for a creamier drink.

Why It Works

Cold brew coffee is naturally lower in acidity than hot-brewed coffee because the cold extraction process produces fewer bitter compounds and less chlorogenic acid. Full-fat coconut milk provides medium-chain triglycerides that your body can convert to quick energy, making this a functional drink rather than just a flavored coffee. Maple syrup dissolves cleanly into cold liquids โ€” something raw honey struggles with โ€” and provides manganese and zinc in small but meaningful amounts.

Tips

  • Make cold brew at home. Combine 1 cup coarsely ground coffee with 4 cups cold water in a jar. Steep in the refrigerator for 12-18 hours, then strain through a fine-mesh sieve lined with cheesecloth. This concentrate lasts over a week and costs a fraction of store-bought.
  • Froth the coconut milk. For a more indulgent drink, warm the coconut milk slightly and froth it with a milk frother or whisk vigorously. Pour the foam on top for a latte experience.
  • Mocha version. Add 1 tablespoon of cacao powder to the coconut milk mixture and whisk until smooth. You get a chocolate-coffee drink that rivals any coffee shop offering.
