Homemade Ginger Ale

Crisp, spicy ginger ale made with fresh ginger root, sparkling water, raw honey, and lemon. Genuinely refreshing.

Ingredients

  • 3 inches Fresh ginger root (peeled and thinly sliced)
  • 1 cup Water (for the ginger syrup)
  • 3 tbsp Raw honey (adjust to taste)
  • 2 tbsp Fresh lemon juice (about 1 lemon)
  • 3 cups Sparkling water (plain, chilled)

Steps

  1. Combine the sliced ginger and 1 cup of water in a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 10-12 minutes until the liquid is fragrant, slightly golden, and reduced by about a third.

  2. Remove from heat and let the ginger steep in the hot liquid for another 5 minutes. The longer it steeps, the more potent the ginger flavor. For mild ginger ale, steep less; for a strong ginger burn, steep longer.

  3. Strain the ginger syrup through a fine-mesh sieve into a jar or measuring cup, pressing the ginger slices with a spoon to extract every drop of flavor. Discard the ginger pieces or save them for tea.

  4. Stir the raw honey into the warm ginger syrup until completely dissolved. Add the fresh lemon juice and stir to combine. Let the syrup cool to room temperature, then refrigerate until cold.

  5. To serve, add 2-3 tablespoons of ginger syrup to a glass filled with ice, then top with chilled sparkling water. Stir gently to combine without losing too much fizz. Adjust the ratio of syrup to sparkling water to your preference.

Why It Works

Fresh ginger contains gingerol, a bioactive compound that supports digestion and has natural anti-inflammatory properties. Making a concentrated syrup first lets you control both the intensity of ginger flavor and the sweetness level โ€” something impossible with store-bought sodas. Raw honey dissolves best in warm liquid and adds trace minerals like zinc and iron that refined sugar strips away.

Tips

  • Batch the syrup. Make a large jar of ginger syrup on Sunday and you have ginger ale on demand all week. The syrup keeps well refrigerated and actually intensifies in flavor over a few days.
  • Ginger intensity. For a milder drink that kids enjoy, use 2 inches of ginger. For adults who want real heat, use 4 inches and add a thin slice of fresh ginger directly to each glass.
  • Carbonation matters. Use the coldest sparkling water you have and pour it slowly down the side of the glass. Cold liquid holds carbonation better, and gentle pouring keeps the bubbles alive.
