Berry Lemonade

Bright, tangy lemonade infused with fresh berries and sweetened with raw honey. A clean swap for juice boxes.

Ingredients

  • 1 cup Fresh or frozen berries (strawberries, blueberries, raspberries, or a mix)
  • 1/2 cup Fresh lemon juice (about 3-4 lemons)
  • 3 cups Filtered water (cold)
  • 3 tbsp Raw honey (adjust to taste)

Steps

  1. If using fresh berries, rinse them and remove any stems. If using frozen, let them thaw for 5 minutes at room temperature β€” they don’t need to be fully thawed.

  2. Add the berries to a blender with 1 cup of the water. Blend until smooth, about 30 seconds. For a seedless lemonade, strain the puree through a fine-mesh sieve into a pitcher, pressing with a spoon to extract all the juice. For a more rustic drink with fiber, skip the straining.

  3. Warm 1/4 cup of water in the microwave or on the stove for 15 seconds β€” just warm, not hot. Dissolve the raw honey in the warm water by stirring until clear. This ensures the honey distributes evenly throughout the cold drink instead of sinking to the bottom.

  4. Combine the berry puree, honey mixture, remaining water, and fresh lemon juice in a large pitcher. Stir well and taste. Adjust with more honey for sweetness or more lemon for tartness.

  5. Serve over plenty of ice in tall glasses. Garnish with a few whole berries or a lemon slice if desired.

  • Berry combinations. Strawberry-blueberry is a crowd pleaser. For a more tart, complex flavor, use all raspberries. Blackberries make a deep purple lemonade that looks stunning in a clear glass.
  • Pitcher method. Double or triple this recipe for a party pitcher. It holds up well over several hours β€” the flavor actually improves as the berries continue to infuse.
  • Sparkling version. Replace half the water with chilled sparkling water, added right before serving. Pour gently to preserve the carbonation.
