Superfood Seed Brittle

Crunchy golden brittle made from pumpkin seeds, sunflower seeds, and honey with a turmeric finish. Sweet, salty, and snappable.

Ingredients

  • 1/2 cup Raw pumpkin seeds (shelled)
  • 1/2 cup Raw sunflower seeds (shelled)
  • 2 tbsp Sesame seeds
  • 1/3 cup Honey (raw)
  • 1 tbsp Coconut oil
  • 1/2 tsp Ground turmeric
  • 1/4 tsp Ground cinnamon
  • 1/2 tsp Sea salt
  • 1/2 tsp Vanilla extract

Steps

  1. Preheat the oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

  2. In a medium bowl, toss together the pumpkin seeds, sunflower seeds, and sesame seeds. In a small saucepan over medium-low heat, warm the honey and coconut oil together until the coconut oil melts and the mixture is thin and pourable, about 1 to 2 minutes. Remove from heat and stir in the turmeric, cinnamon, sea salt, and vanilla extract.

  3. Pour the warm honey mixture over the seed mixture and stir until every seed is evenly coated. The mixture should look glossy and cohesive.

  4. Spread the coated seeds onto the prepared baking sheet in a single, thin, even layer β€” aim for about 1/4-inch thickness. Use the back of an oiled spatula or a piece of parchment paper pressed on top to flatten and compress the layer firmly.

  5. Bake for 12 to 15 minutes until the edges are golden and the honey is bubbling. The brittle will look soft when it comes out β€” this is normal. Let it cool completely on the baking sheet without touching it for at least 15 minutes. It will harden as it cools into a snappable brittle. Break into irregular pieces and store in an airtight container.

Tips

  • Don’t overbake. The line between golden brittle and burnt is thin. Start checking at 12 minutes. The honey will continue to caramelize from residual heat after removal.
  • Firm pressing. Compressing the seed layer tightly before baking is what creates a connected brittle rather than loose clusters. Don’t skip this step.
  • Cool completely. The brittle must cool fully on the pan to set properly. Breaking it while warm will give you crumbles instead of clean snapping pieces.
  • Customize. Swap in hemp seeds, flax seeds, or chia seeds for any of the base seeds. Add a pinch of cayenne for a sweet-heat version.
