Peanut Butter Crispy Bars

Ingredients

  • 3/4 cup Natural peanut butter (creamy, no added sugar or oils)
  • 1/3 cup Raw honey
  • 1 tbsp Coconut oil (melted)
  • 1 tsp Vanilla extract
  • 1/4 tsp Sea salt
  • 3 cups Puffed brown rice cereal (unsweetened)
  • 6 ounces Dark chocolate (85% cacao or higher, chopped)
  • 1 tsp Coconut oil (for chocolate topping)

Steps

  1. Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides. In a medium saucepan over low heat, combine the peanut butter, honey, 1 tablespoon coconut oil, vanilla extract, and sea salt. Stir until everything is melted and smooth, about 2 minutes. Do not let it boil.

  2. Remove the pan from heat and fold in the puffed rice cereal, stirring gently until every piece is evenly coated. Be careful not to crush the cereal.

  3. Transfer the mixture to the prepared baking pan and press it down firmly and evenly using a spatula or the bottom of a measuring cup. Compact it well so the bars hold together when cut.

  4. Melt the dark chocolate with 1 teaspoon coconut oil and spread it evenly over the top of the cereal layer. Refrigerate the whole pan for 15 to 20 minutes until the chocolate is fully set. Lift the slab out using the parchment overhang and cut into 12 bars.

This clean version uses natural peanut butter as both the binder and the primary flavor, delivering protein and healthy fats in every bite. Tips

  • Peanut butter consistency. Stir your peanut butter well before measuring. If it is too thick, the cereal will clump. Natural peanut butter that is slightly runny works best.
  • Do not crush the cereal. Fold the cereal in gently with a large spatula. Vigorous stirring will break the puffs and make the bars dense instead of crispy.
  • Almond butter version. Swap in almond butter for a different flavor. Add 2 tablespoons of cacao powder to the butter mixture for a chocolate almond variation.
  • Drizzle option. Instead of a full chocolate layer, drizzle the chocolate in thin lines across the top for a lighter bar.
