Everything Bagel Pita Chips

Ingredients

  • 4 rounds Whole wheat pita bread (6-inch)
  • 2 tbsp Olive oil
  • 1 tbsp Sesame seeds (white or mixed)
  • 1 tsp Poppy seeds
  • 1 tsp Dried minced garlic
  • 1 tsp Dried minced onion
  • 1 tsp Flaky sea salt

Steps

  1. Preheat the oven to 375 degrees Fahrenheit and line two baking sheets with parchment paper. Separate each pita round into two thin circles by carefully splitting along the edge, then cut each circle into 6 wedges.

  2. Arrange the pita wedges rough-side up in a single layer on the baking sheets. Brush or drizzle the olive oil evenly across the tops.

  3. Combine the sesame seeds, poppy seeds, dried garlic, dried onion, and flaky salt in a small bowl. Sprinkle the seasoning generously over the oiled pita wedges.

  4. Bake for 8-10 minutes until golden brown and crisp throughout. The chips can go from done to burnt in under a minute, so watch closely after the 7-minute mark.

  5. Let cool on the baking sheets for 3 minutes. The chips will crisp further as they cool. Serve with hummus, cream cheese, or on their own.

Why It Works

Splitting each pita round in half before cutting creates thin, single-layer chips that crisp evenly and quickly. The rough interior surface of the pita grabs onto the everything bagel seasoning and holds it in place, while the olive oil provides enough fat for browning without the heaviness of deep frying.   • Splitting the pita. If the pita resists splitting, microwave it for 10 seconds โ€” the steam makes the layers separate easily.
  • Pre-made seasoning. If you have a jar of everything bagel seasoning, use 2 tablespoons instead of mixing the individual seeds and spices.
  • Storage. These keep exceptionally well because pita has low moisture content. Store in a zip-top bag with the air pressed out.
  • Variation. Try with naan bread for a softer, butterier chip, or use gluten-free pita for a celiac-friendly version. Naan chips will need 1-2 extra minutes of bake time.
