Elderberry Immune Gummies

Chewy elderberry and honey gummies made with grass-fed gelatin. A trending immune-support snack with real fruit and no artificial dyes.

1 hr 30 min intermediate Yields 40 gummies Keeps 2 weeks refrigerated

Ingredients

  • 1 cup Elderberry juice (100% pure, not from concentrate)
  • 3 tbsp Raw honey
  • 3 tbsp Grass-fed gelatin powder (unflavored)
  • 1 tbsp Fresh lemon juice
  • 2 tbsp Elderberry syrup (optional, for extra potency)

Steps

  1. Pour the elderberry juice into a small saucepan. Sprinkle the gelatin powder evenly over the surface of the cold juice and let it bloom for 5 minutes without stirring. The gelatin will absorb the liquid and form a thick, wrinkled layer on top.

  2. Place the saucepan over low heat and stir gently until the gelatin dissolves completely and the mixture is smooth and warm β€” about 2 to 3 minutes. Do not let it boil, as high heat degrades gelatin’s setting power.

  3. Remove from heat and stir in the honey, lemon juice, and elderberry syrup if using. Whisk until the honey is fully dissolved and the mixture is uniform in color.

  4. Carefully pour the liquid into silicone gummy molds using a small measuring cup with a spout or a squeeze bottle for precision. Fill each cavity to the top. If foam appears on the surface, skim it off with a spoon.

  5. Refrigerate the filled molds for at least 1 hour until the gummies are completely firm and pop out cleanly. Once set, remove from molds and store in an airtight container in the refrigerator. They’ll firm up even more overnight.

Why It Works

Elderberries are one of the most studied natural immune-support berries, rich in anthocyanin antioxidants and vitamin C that support the body’s innate immune defenses. Grass-fed gelatin provides glycine and proline β€” amino acids that support gut lining integrity, which is directly linked to immune function since roughly 70% of the immune system resides in the gut. Raw honey adds its own antimicrobial properties and gentle sweetness without the blood sugar spike of refined sugar. Together, these ingredients create a functional gummy that works on multiple fronts.

Tips

  • Bloom the gelatin. Skipping the 5-minute bloom step results in lumpy, unevenly set gummies. Patience here makes a real difference.
  • Mold options. Silicone gummy bear molds work perfectly, but any small silicone mold shape will do. Avoid standard ice cube trays β€” the gummies will be too large.
  • Honey temperature. Add honey after removing from heat. High heat destroys honey’s beneficial enzymes and antimicrobial compounds.
  • Dosing. Four gummies per day is a reasonable serving. These are food, not medicine β€” but elderberry consumption should be paused if you develop a fever, as elderberry may overstimulate an already-active immune response.
