Ingredients

  • 1/3 cup Collagen peptides powder (unflavored, grass-fed)
  • 1/2 cup Almond butter (creamy)
  • 1/4 cup Honey (raw)
  • 1 cup Rolled oats (gluten-free if needed)
  • 1/2 cup Mixed nuts (almonds, cashews, and walnuts, roughly chopped)
  • 2 ounces Dark chocolate (85% cacao, chopped into chunks)
  • 1 tbsp Coconut oil (melted)
  • 1 tsp Vanilla extract
  • 1/4 tsp Sea salt

Steps

  1. Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides for easy removal. Lightly grease with coconut oil.

  2. In a large bowl, warm the almond butter, honey, melted coconut oil, and vanilla extract together until pourable and smooth. A quick 20-second microwave pulse works well. Stir in the sea salt.

  3. Add the collagen peptides powder and stir vigorously until fully dissolved with no clumps. The mixture will thicken noticeably as the collagen hydrates.

  4. Fold in the rolled oats, chopped mixed nuts, and dark chocolate chunks until everything is evenly distributed throughout the mixture.

  5. Transfer the mixture into the prepared pan and press it down firmly and evenly using the back of a spatula or a piece of parchment paper. Press hard โ€” dense bars hold together better when sliced.
