15 min beginner Yields 16 bites Keeps 2 weeks refrigerated, 2 months frozen

Ingredients

  • 1/2 cup Almond butter (creamy, no added oils)
  • 3 tbsp Raw cacao powder
  • 2 tbsp Maple syrup
  • 1 tsp Ashwagandha powder (KSM-66 or similar extract)
  • 1 tsp Maca powder
  • 3/4 cup Rolled oats (gluten-free if needed)
  • 1 tbsp Coconut oil (melted)
  • 1/4 tsp Flaky sea salt
  • 2 tbsp Cacao nibs (for rolling, optional)

Steps

  1. In a large mixing bowl, stir together the almond butter, melted coconut oil, and maple syrup until smooth and well combined.

  2. Add the raw cacao powder, ashwagandha powder, maca powder, and sea salt. Mix thoroughly until no dry streaks remain and the color is uniformly dark.

  3. Fold in the rolled oats until the mixture holds together when pressed between your fingers. If it feels too dry, add another teaspoon of maple syrup. If too wet, add a tablespoon more oats.

  4. Scoop tablespoon-sized portions and roll them into tight balls between your palms. If desired, roll each ball in cacao nibs to coat the outside for added crunch.

  5. Place the bites on a parchment-lined plate or tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator.

Why It Works

Ashwagandha is an adaptogenic herb traditionally used to support the body’s stress response and promote balanced cortisol levels, while maca root is prized for its ability to support energy and endurance without caffeine. Raw cacao delivers a potent dose of magnesium, iron, and flavonoid antioxidants β€” far more than processed cocoa. Almond butter adds satiating protein and healthy fats that slow the absorption of natural sugars, keeping energy steady instead of spiking and crashing.

Tips

  • Adaptogen dosing. Stick to the recommended 1 tsp per adaptogen for the full batch. These are potent compounds and more is not better β€” especially if you’re new to them.
  • Texture adjustment. For fudgier bites, reduce oats to 1/2 cup. For a drier, cookie-dough texture, increase to 1 cup.
  • Add-ins. Hemp seeds, shredded coconut, or a pinch of cinnamon all work beautifully here without competing with the cacao flavor.
  • Make ahead. These bites keep their texture and flavor well for two weeks refrigerated, making them ideal for weekly meal prep.
