Peanut Butter Banana Bites

Ingredients

  • 2 large Bananas (Firm but ripe)
  • 1/4 cup Peanut butter (Natural, no added sugar)
  • 2 oz Dark chocolate (70% cacao or higher)
  • 1 tsp Coconut oil (For thinning chocolate)
  • 1 pinch Sea salt (Flaky, for topping)

Steps

  1. Slice the bananas into 1/2-inch thick rounds. You should get about 12-16 slices per banana depending on size.

  2. Spread a small dollop of peanut butter (about 1/2 teaspoon) on half the banana slices. Press the remaining slices on top to form sandwiches.

  3. Place the assembled bites on a parchment-lined baking sheet and freeze for at least 1 hour until solid.

  4. Melt the dark chocolate with coconut oil in a small bowl over a double boiler or in 20-second microwave intervals, stirring between each. The coconut oil helps the chocolate set into a smooth, snappy shell.

  5. Remove the frozen bites from the freezer. Use a fork or spoon to drizzle the melted chocolate over each bite in a zigzag pattern.

  6. Sprinkle a few flakes of sea salt on top of the chocolate while it’s still wet, then return to the freezer for 10 minutes to set.
