Caramel Date Bites

Medjool dates stuffed with almond butter, sprinkled with sea salt, and rolled in coconut. Nature's caramel candy, perfected.

Ingredients

  • 12 Medjool dates (large, pitted)
  • 1/4 cup Almond butter (smooth or crunchy)
  • 1/4 teaspoon Sea salt (flaky)
  • 1/3 cup Coconut flakes (unsweetened, finely shredded)

Steps

  1. Slice each Medjool date lengthwise along one side and gently open it like a book. Remove the pit if not already pitted. Be careful not to split the date completely in half.
  2. Spoon approximately one teaspoon of almond butter into the center of each date. Press the date closed around the filling so the almond butter is mostly enclosed but slightly visible at the seam.
  3. Spread the coconut flakes on a small plate. Roll each stuffed date in the coconut, pressing gently so the flakes stick to the exterior.
  4. Place the finished bites on a parchment-lined plate or tray. Sprinkle a few flakes of sea salt on top of each one.
  5. Refrigerate for at least 15 minutes to firm the almond butter and let the flavors meld. Serve chilled or at room temperature.

Why It Works

Medjool dates have a naturally soft, caramel-like texture and rich sweetness that eliminates any need for refined sugar. The almond butter adds protein and healthy fats that balance the natural sugars, preventing a blood sugar spike. Tips

  • Variation. Drizzle melted dark chocolate (85% cacao) over the finished bites and return them to the refrigerator until the chocolate sets for a more decadent treat.
  • Storage. Keep refrigerated in a single layer in an airtight container. They freeze exceptionally well and can be eaten straight from the freezer for a chewy, ice-cream-like texture.
  • Substitution. Cashew butter or tahini can replace almond butter. Tahini adds a more savory, nutty depth that pairs beautifully with the caramel sweetness of the dates.
