Pour the fruit juice into a small saucepan and sprinkle the gelatin evenly over the surface. Let it bloom for 5 minutes without stirring β the gelatin will absorb the juice and swell.

Place the saucepan over low heat and whisk gently until the gelatin is fully dissolved, about 3-4 minutes. Stir in the raw honey until combined. Remove from heat immediately β overheating weakens the gelatinβs ability to set.

Pour the mixture into worm-shaped silicone molds using a squeeze bottle or small pitcher. If you donβt have worm molds, use a shallow dish lined with parchment paper and cut into worm-sized strips after setting.

Refrigerate for at least 1 hour until the gummies are completely firm. Gently peel them out of the molds. If they resist, flex the silicone from the back to release them.

Mix the citric acid and coconut sugar together in a small bowl. Toss the gummy worms in the sour coating, a few at a time, until they are evenly dusted. The coating should cling to the tacky surface of the gummies.

Lay the coated worms on parchment paper for 10 minutes to let the coating set. Store in an airtight container with parchment between layers to prevent sticking.
Why It Works
Citric acid triggers the same mouth-puckering sour response as conventional sour candy, but here itβs paired with coconut sugar instead of refined white sugar. Coconut sugar retains small amounts of iron, zinc, and potassium that white sugar lacks. The grass-fed gelatin provides collagen protein that supports gut lining health, and using real tart fruit juice as the base means the sour flavor runs all the way through the gummy β not just on the surface.
Tips
- Double sour. For extra pucker, add half a teaspoon of citric acid directly to the juice mixture before pouring into molds, so the gummies themselves are tart inside and out.
- Straw molds. No worm molds? Tape the bottoms of wide drinking straws together, stand them upright in a glass, and pour the mixture in. Chill, then push the worms out with a chopstick.
- Color coding. Use different juices for different colors β lemon for yellow, tart cherry for red, grape for purple. Kids love sorting and mixing them.
- Vegan & kosher alternative. Replace the grass-fed gelatin with 1 teaspoon of agar-agar powder. Whisk the agar into the cold juice, bring to a gentle boil (agar must boil to activate, unlike gelatin), then simmer for 2 minutes before adding the honey. Agar sets firmer than gelatin and wonβt melt at room temperature, so the worms will be slightly less flexible β but the sour coating works exactly the same way.
