Pour the fruit juice into a small saucepan. Sprinkle the gelatin evenly across the surface and let it bloom for 5 minutes β do not stir yet. The gelatin needs to absorb the liquid before heating.

Place the saucepan over low heat and whisk gently until the gelatin dissolves completely, about 3-4 minutes. The mixture should be smooth with no visible granules. Do not let it boil or the gelatin will lose its setting power.

Remove from heat and stir in the raw honey until fully incorporated. Taste and adjust sweetness β the mixture will taste slightly less sweet once set.

Carefully pour the liquid into silicone gummy bear molds using a squeeze bottle or a small measuring cup with a spout. Fill each cavity to the top. If you donβt have bear molds, use any small silicone mold or pour into a parchment-lined dish and cut into cubes later.

Transfer the molds to the refrigerator and chill for at least 1 hour until the gummies are fully set and firm to the touch. Pop them out of the molds gently.

Toss the finished gummies in a light dusting of gelatin powder if they stick together. Store in a single layer or separated by parchment paper in an airtight container.

- Vegan & kosher alternative. Replace the grass-fed gelatin with 1 teaspoon of agar-agar powder. Whisk the agar into the cold juice, bring to a gentle boil (agar must boil to activate, unlike gelatin), then simmer for 2 minutes before adding the honey. Agar sets at room temperature and produces a firmer, slightly more brittle gummy than gelatin β reduce the amount slightly if you prefer a softer bite. Fruit pectin also works but requires added sugar and acid to gel properly.
